Grilled Pound Cake with Muirhead  Pomegranate Syrup


1 pound cake, ½-inch thick slices
2 Tbsp coconut oil
6 peach halves
6 scoops ice cream
1 bottle of Muirhead  Pomegranate Syrup
Mint leaves for garnish, optional

Heat grill for 10 - 15 minutes. (Clean grill beforehand to prevent any savory flavorings from meats, poultry, fish or vegetables from mixing with the sweetness of the pound cake.) Brush grill side of the pound cake with coconut oil and place oil-side down on grill. Grill for 5-8 minutes and periodically check for doneness (i.e., grill marks) by lifting corner of slice with metal spatula. Remove from grill when done. Trim off bottom of peach half for stability. Place half a peach with scoop of ice cream on each cake slice. Drizzle Muirhead  Pomegranate Syrup over ice cream, fruit and cake. Garnish with mint leaf. Serve immediately. Serves 6.
