Muirhead Green Tomato Mincemeat
Oatmeal Cookies

1 cup butter
1 ½ cups white sugar
½ tsp. vanilla extract
3 eggs
3 ¼ cups all-purpose flour
1 tsp salt
1 tsp baking soda
2 cups oatmeal, uncooked
1 jar Muirhead Green Tomato Mincemeat

Preheat oven to 350 degrees F. Place parchment on cookie sheets and spray lightly with
oil. Cream together butter and sugar. Mix in eggs and vanilla. Sift flour, salt, and
baking soda together and add to butter mixture. Mix until well blended. Mix in the
oatmeal and Muirhead
Green Tomato Mincemeat. Drop by tablespoons onto cookie sheet. Bake 12-14 minutes. Makes
5 dozen cookies.
