Blueberry Butter Muffins


2 eggs
1 cup white sugar
½ tsp lemon rind, grated
1 cup plain yogurt (regular or fat-free)
1 cup Muirhead  Blueberry Butter
2 cups flour
1 tsp baking powder

Preheat oven to 375º. Grease muffin pan. Beat eggs, sugar and lemon rind in a bowl. Stir in yogurt and Muirhead  Blueberry Butter. Sift together flour and baking powder. Stir into batter until just blended. Spoon into muffin tins and bake for 25 minutes. Serves 12.
